i had apricot pie for the first time a few weeks ago baked by my friend claire, we ate it under the bridge watching the sunset with a bottle of wine, it was a perfect night with a group of friends. this summer has been perfect, we are enjoying living in the city so much. i thought i'd attempt making mini pies for a family dinner we had this week, they were delicious, so simple, i just added corn starch, coconut sugar, and a little bit of salt to the fresh cut up apricots, they were so yummy.
